About the Program

Courses by Unicakery Tutorials are specially crafted and inspired by Naomi's hands-on industry experience! Take your cake artistry to the next level with our Certificate in Cakes & Confectioneries Course, designed for passionate bakers and decorators looking to refine their skills and master professional techniques. In six weeks, you’ll become acquainted with advanced cake decorating, buttercream art, sugar artistry, and the business essentials needed to elevate your craft.

 

This is an intensive course that will run for a duration of 6 weeks (8 modules). Classes are on Saturdays and Sundays (9 days total) and will require some at-home activity. Upon completion, all participants must complete a mandatory evaluation, once successful you will receive ACTD internationally accredited certification!

Cost $7850 (payment plan options are available) inclusive of all tools, recipes and ingredients!  A downpayment of $2000 is required to confirm your spot!

Course Overview

Module 1: Business Essentials and Recipe Costing

Learn how to accurately price your cakes by calculating ingredient costs, factoring in overhead, and setting profitable margins. This module also covers branding, client management, and strategies for building a sustainable cake business.

Module 2: Gumpaste Flowers

Master the art of crafting life-like sugar flowers, including roses, hydrangeas, calla lilies and filler flowers. These delicate decorations will enhance fondant cakes and elevate your cake artistry skills.

Module 3: Modern Fondant Artistry

Perfect your fondant skills with sculpting, intricate textures, and seamless finishes. This module aligns with the Gumpaste Flowers class, allowing students to integrate sugar flowers with fondant techniques like ruffling and texturing.

Module 4: Cupcake Artistry

Learn to bake and decorate cupcakes with advanced buttercream techniques, elaborate piping, and intricate decorative elements. This module includes fillings, layering, and creative designs that go beyond traditional cupcakes.

Module 5: Modern Cake Decorating

Focus on structured designs, elegant embellishments, and modern cake trends. Cakes for this module will be baked during the Cupcake Artistry class, allowing students to explore elaborate drip cakes and tall cake designs. We will also explore different types of buttercreams and how they work best for cake decorating.

Module 6: Artisanal Dessert Table Basics

Create a stunning dessert table featuring a selection of macarons, eggless cheesecakes, and other classic confections. Learn how to design, balance flavours, and present a cohesive dessert display.

Module 7: Chocolate Art

This module includes a field trip to San Salvador Cocoa Estate in Gran Couva, providing hands-on experience with chocolate production and artisanal techniques.

FINAL ASSESSMENT 

The Grand Cake & Party Display

For the final assessment, students will work in teams to create a fully themed cake and dessert display that brings together everything they’ve learned throughout the course. This will go beyond just a single cake—it will be a grand showcase of an entire event setup, including coordinated desserts, table styling, and artistic presentation.
