This eggless chocolate cupcake recipe is the perfect treat for special occasions or even if you'd like to satisfy a desire to bake. I've always loved baking eggless cakes because it shows the versatility of baking and highlights other types of leavening agents like baking soda and vinegar.
This recipe is rich and decadent and has a delicious chocolatey flavour. It pairs well with any buttercream. I'd specifically recommend using chocolate buttercream!
Ingredients
1 cup flour
3 tbsp cornstarch
1 cup granulated sugar
3/4 cup cocoa powder
1/4 tsp baking soda
1 1/4 tsp baking powder
1/4 tsp salt
1/2 cup oil
1 cup whole milk
1 tbsp white vinegar
Preparation
Step 1
Preheat oven to 350°F
Step 2
Sift together all dry ingredients (flour, cocoa powder, corn starch etc.) in a bowl and ensure that they are well combined.
Step 3
Make a well in the middle of the dry ingredients and add milk, oil, vinegar and vanilla.
Step 4
Combine ingredients together with a whisk until there are no lumps left in the batter.
Step 5
Transfer mixture to a prepared cupcake pan lined with cupcake liners and bake for 20 minutes.
